One of the most enjoyable aspects of camping is the gathering around the campfire in the evening. The effect of campfire smoke and a crackling campfire creates a relaxation experience you can’t get from anything else. And for many campers cooking meals at the campfire is the highlight of the camping trip. And campfire meals do not have to be limited to cooking frankfurters on a stick.
Campfire stuffed peppers can be a satisfying easy to create meal for campers.
You will need these ingredients:
6 green peppers with tops and seeds removed
2 cups of cooked rice
1 medium chopped onion
2-3 clove chopped garlic
1 lb ground beef
2 tbsp butter
1 Jar of Ragu Rich and Meaty Spaghetti Sauce (or your favorite sauce)
Boil green peppers for approximately 5 minutes. Mix all ingredients in a bowl. It’s easier to premix the ingredients at home. Stuff the peppers with the ingredients and wrap the peppers individually with 2 layers of heavy duty aluminum foil. Bake in medium hot coals for 30 minutes. Turn occasionally and do not cook in very hot coals or direct fire.
A few ears of butter dripping corn and some fire baked garlic bread would go well with this meal.
